This takes a total preparation time of one hour, while you have to cook it for not more than twenty – five minutes.

For the pudding / cake:

  • 225g dates
  • 175ml boiling water
  • Vanilla extract
  • 175g flour
  • 1 tsp of bicarbonate soda
  • 2 eggs – beaten
  • 85g butter
  • 140g sugar
  • Treacle
  • 100ml milk
  • Cream if you would like

For the toffee sauce:

  • 175g light sugar
  • 50g butter
  • 225ml double cream
  • Treacle

Method:

  • Chop the dates and leave them in hot water and baking soda until cooled and soaked. Then mash it while adding vanilla.
  • Butter and flour seven small pudding tins, or one large, up to you!
  • Mix the flour with soda and add the eggs, sugar, and butter and beat them together. Beat until the mixture is slight creamy and then add the treacle along with step by step addition of milk and mix again until all the milk is used.
  • Stir the dates into the batter and mix well.
  • Put it into the tins and bake 20 – 25 minutes in a preheated oven at 350F.
  • Meanwhile melt the butter, sugar and treacle of the sauce in a pan at very low heat, while stirring gently.
  • Then stir the double cream in and increase the heat.
  • When it boils take it off the cooker.
  • When you take the cake out of the oven, prick it with a fork all over the surface. Make sure that you make as many little holes as you can.
  • Then pour the sauce over it and completely cover it.

You can have it right away once cooled, but do you what is even stickier? Leaving the small puddings covered in a foil for two or three days. You do not have to put it in a refrigerator. Simply leave it sealed with a foil and heat it for 4 – 5 minutes when you are going to eat it.
